Of course, it's never fair to render judgement during a first week of operation--especially with barbecue, which requires so much tweaking of equipment. But to his credit, and my amazement, the Pearson's pitmaster (I really must learn his name; he's the serious-looking mustachioed Latino fellow who's long been Pearson's secret weapon) has already worked out most of the kinks.
